Pan-fried Turkey with Oranges
3 tbsp sunflower oil, 450g/1lb turkey breast steaks, cut into even-size pieces, 2 courgettes, chopped, 2 tsp cornflour , 450ml/3/4 pint chicken stock , 2 tbsp Mizkan Seasoned Rice Vinegar , 12 pitted prunes , 1 orange, peeled and segmented , 175g (6oz) frozen peas , Salt and pepper

Method
Heat 2 tablespoons oil in a large frying pan and lightly brown the turkey breast pieces on both sides over a high heat. Remove from the pan and set aside. Add the remaining oil to the pan and sauté the courgettes for 3 minutes. Mix the cornflour with a little of the stock until smooth and add to the pan with the remaining stock and vinegar. Bring to the boil, stirring constantly, then return the turkey to the pan. Add the prunes, orange segments and frozen peas. Season with salt and pepper, cover the pan and simmer gently for 15 minutes. Serve garnished with little orange rind and mashed potatoes.
